EZ Eats: Salmon, Salad, Potatoes, and Broccoli


Tonight for dinner we had baked salmon (from frozen...no oceans of fresh fish around these parts) with lemon juice and garlic as seasoning. I baked it at 350*F for 15min. We had a salad on the side with all the trimmings. E had a baked red potato, but I passed because I try to avoid anything high in starch. We don't use white potatoes. We try to stick to red potatoes and sweet potatoes. Both bake in the oven just as well and taste a lot better! You wrap them in their own foil and they take about an hour at 350*F. We also had broccoli and cauliflower that was frozen and I heated it in the oven for 30 minutes. Fresh is better, but frozen is quick, so we do frozen every once in awhile. Aren't healthy meals easy!


Nutrition Notes: We use mixed greens lettuce for salad. Make sure to buy salad with dark leaves because it is high in antioxidants. We had roasted red pepeprs and olives on the salad. Olives are a good source of healthy fats and res peppers are high in folate and many other vitamins! Salmon is great for protein and healthy omega 3 fats to even out all the omega 6 fats that creep into our diet. Broccoli is a good source of vitamins, calcium and iron! Nothing unhealthy hiding in this meal!
