Veggies Make You Strong


I had to post a vegetarian meal in honor of me visiting my vegetarian sister. I am a big fan of steak and chicken strips and sausage, but as I get older and realize that although meat has its benefits, there are other food out there that are better for your health. So, for today I'll pretend that I could actually give up meat and become a vegetarian (I don't see this sticking permanently).

Spinach Omelet
a handful of spinach (I like to tear mine so that it is easier to eat)
1 mushroom
tbsp of plain cream cheese (I never use reduced fat or low fat of any product, the fat is usually just taken out and replaced with something else)
2 eggs
tbsp olive oil
a sprinkle of Tony's or crushed red pepper for a little kick

Directions:
Heat the olive oil in a pan and then add the eggs. Wait until the eggs start to boil, and then start separating the egg from the pan. After the eggs are no longer liquidy add spinach, mushrooms and cream cheese. Close the omelet (from a whole circle to a half circle). Wait until it the underside browns a little then flip it over. This is the hardest part, and often takes some practice. I like to use a spatula like the ones you would use to stir brownie batter. It makes it a little easier. The omelet is finished after the other side is cooked (shouldn't take more than a minute or two). Goes great with wheat toast! Also you can change any of the toppings to make it custom, but I'm sure you already knew that.




Half IronMan

Anyone who commits to doing an IronMan or even half of one has some serious cajones! My roommate's boyfriend recently completed his first one after puking numerous times and needing 2 IV's to revive him at the finish. My crazy boyfriend, EZ, after hearing this story has decided that he wants to be next and after his dad told him he would join him in a half IronMan, he was eager to start training. I decided that he needed a training partner so I would do a modified version of his workouts. I am not a runner. Growing up in the water makes it a little difficult to be a track star. What fish have you ever seen that has legs? So in order to train with him I said he would have to run circuits and I would drop off when I could not longer keep up. Hopefully this new workout works out ;) because I am seriously missing my little athlete body that used to fit into my favorite jeans! Kahlua will of course be joining us on these runs because that little chocolate labmaraner has more energy than a class of kindergardeners. Apart from running there will also be miles of biking. I love riding, but I'm a little hesitant to ride my bike into traffic, which EZ being an experienced Triathlete will completely disregard. As for the swimming, we'll see if I actually get back in the water. It may take me awhile to get to a point where I miss those workouts. Wish me luck on my new training endeavor!

About, Aboard, Above

In Junior High we had to memorize every preposition in the English language, (that was a fun and useful experience...) so know every time I think of the word "about" the words "aboard, above" immediately follow. I wanted to write a short explanation of my blog/an about me. I just graduated from LSU with a degree that I don't know how to use. I also finally finished a 16 year swimming career, yes I said 16. This is the first time in my life that I have been allowed to be out of shape without that dreadful feeling that I will have to return to practice and regret taking those 2 weeks off. Today was actually the first time I really worked out since I stopped swimming and lemme tell ya it was way harder than it should have been. I went to a cardio circuit class at the local YMCA with my sister who I am currently visiting and realized that I should probably start doing a little more than walk the dog a few times a week and take the occasional jog. I've always hated feeling out of shape and getting to the point where my clothes don't fit exactly how I want, so I think its time to get into a workout routine and get back to eating healthy. Healthy is the key word in all of this. I don't want to be skinny or thin or any of that. I just want to be healthy (and not have to invest in a whole new wardrobe). Exercise and diet are the only way I know how to achieve those goals. So join me on my journey as I try to find a job or even better a career while staying healthy and a little less stressed out along the way.
