Mint Chocolate Chip Snoball

Back in Louisiana we had snowcones called snoballs. They were AMAZING! And packed with sugar ;) I came across this recipe and decided to adapt to fill my snoball craving. Here's how I changed it:

Ingredients:
1 can of coconut milk
1 tbs cocoa powder
2 squares of dark chocolate
1/4 a cup of honey (or less)
1/4 tsp or more to taste of mint extract

Put all ingredients in a high power blender and blend! Transfer to a freezer safe container and freeze for 6 or more hours. Remove from the freezer and serve!

Nutrition Notes: This brand of coconut milk is free from BPA. Hooray! Mint is great for your tummy, but don't eat too much honey!! When buying honey NEVER buy honey from out of the U.S. Other countries do not have the same regulations we do. Also try to buy local or as close to local as possible. Local honey helps combat allergies. Choose a dark chocolate that is high in cacao and low in sugar. It will taste sweet with the honey added.
