EZ Eats: Home Alone!

I left poor E home alone this week so I could spend some time with my momma. I was a nice wifey and made him 4 days worth of food before I left. Here is what the fridge looked like when I left.

Breakfast: 2 days of scrambled eggs with veggies and sausage, paleo pancakes (thanks Rosita for the recipe), 2 hardboiled eggs with sweet potato hash and bacon.

Lunch: Leftovers from dinner plus 3 chicken breasts, beef broth, sliced cucumber, date bars and sweet potato chips.

Dinner: Zucchini lasagna, chicken bake, sausage casserole, steak and sweet potatoes with roasted okra

Is he spoiled or what?? The best part is this only took me about 2 hours to make! Not bad for a week of meals!
